Pumpkin Spice Sugar Cut-out Cookie Recipe

These pumpkin cookies have a pumpkin spice and cinnamon flavor, perfect for fall!

STEP 1: In medium bowl whisk flour, cinnamon, and pumpkin spice. Set aside.

STEP 2: In a large mixing bowl, beat the butter and granulated sugar on high for 2-3 minutes.

STEP 3: Add pumpkin puree and beat on medium for about 1 minute.

STEP 4: In a small bowl, combine egg, vanilla extract, baking powder, and salt. Add to butter and pumpkin mixture and beat on medium for 30 seconds to 1 minute.

STEP 5:  With an electric mixer, beat in flour ½ cup at a time, mixing each addition until just combined.

STEP 6:  Roll the dough 3/8" thick between two sheets of wax paper. Place in freezer for 15-20 minutes.

STEP 7:  Cut dough into shapes and bake at 350° for 12-15 minutes. Remove from the oven, let sit on the baking sheet for 5 minutes and transfer to cooling rack.
