Funfetti Cake Mix Bar Cookies

These cake mix cookie bars call for a few simple ingredients and you'll have a delicvious dessert in just about 30 minutes.

Ingredients

  • ¾ Cup Unsalated Butter Room Temperature
  • ½ Cup Granulated Sugar
  • ¼ Cup Brown Sugar Packed
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • 1 Box Funfetti Cake Mix
  • 1 Can Vanilla Frosting
  • Extra Sprinkles

Instructions

  • Pre-heat oven to 350 degrees. Spray a 13x9 brownie pan with nonstick cooking spray or line it with parchment paper, set aside. 
  • In a large bowl, add the room temperature butter, sugar, and brown sugar. With an electric mixer, beat the mixture for 1-2 minutes on high speed.
  • Add the eggs and vanilla extract. Beat with a mixer on low-medium speed for about 30 seconds to 1 minute.
  • Continue beating on low while adding about ½ cup of the cake mix at a time. 
  • When all of the cake mix has been added and fully mixed in, spread it across the pan using a spatula.
  • Bake for 15-17 minutes until the edges are light brown and the top of the bars are golden brown. 
  • Let them cool completely before frosting them with canned vanilla frosting.
  • Top with sprinkles and enjoy!
